Clean and Season the Turkey

Begin by cleaning the turkey thoroughly. Remove the giblets and neck from the cavity and rinse the turkey inside and out with cold water. Pat it dry with paper towels.

Next, season the turkey generously with salt and pepper. This will enhance the overall flavor of the bird.

Prepare the Stuffing

To prepare the stuffing, start by sautéing the chopped celery, onion, carrots, and minced garlic in a tablespoon of butter over medium heat until they become tender. Set them aside to cool for a few minutes.

In a large bowl, combine the breadcrumbs, dried thyme, dried rosemary, and the sautéed vegetables. Mix everything together until well combined. Feel free to add some additional herbs or spices according to your taste.

Stuff the Turkey

Now comes the fun part – stuffing the turkey! Start by loosely filling the neck cavity with the prepared stuffing. Be careful not to pack it too tightly as it may prevent the turkey from cooking evenly. Secure the neck skin to the back of the turkey using kitchen string.

Cooking the Stuffed Turkey

Once the turkey is stuffed, it's time to cook it to perfection. Preheat your oven to 325°F (165°C).

Place the stuffed turkey on a rack in a roasting pan, breast side up. Cover the turkey with aluminum foil, leaving some room for air circulation.

Cook the turkey for approximately 15 minutes per pound. For a 12-15 pounds turkey, this would take around 3 to 3 ¾ hours. Halfway through cooking, remove the foil to allow the skin to brown and become crispy.

To ensure that the turkey is cooked through, use a meat thermometer to check for an internal temperature of 165°F (75°C) in the thickest part of the thigh. Also, make sure the stuffing reaches a safe internal temperature of 165°F (75°C).

Once cooked, carefully remove the turkey from the oven and let it rest for 20-30 minutes before carving. This allows the juices to redistribute and the turkey to become more tender and flavorful.
